Healthy Eggplant Parm :
The tough part about eating healthy for most people is missing the comfort foods. I finally found a healthier version of eggplant parm thats actually good. Another food I was missing was pasta. The pasta I used for this recipe is, shirataki pasta. Its gluten-free, egg free, vegan, no fat, sugar, sodium, cholesterol and it only has 4 grams of carbs. The pasta has no real flavor, it takes on the flavor of whatever you cook it in. You can find it in most super markets near the tofu and vegan products.
ingredients:
- eggplant -peeled and cut
- 1 egg
- coconut flour
- sauce
- shirataki pasta
- mozzarella ( optional )
pre heat over to 350. Beat the egg in one bowl and put coconut flour in another bowl. Dip eggplant in egg then in the flour and place on a baking sheet. Cook for 5-7 min then flip eggplant over and cook for another 5-7 min. After you bake it, line a baking dish with sauce and place eggplant in a single layer. If you are adding cheese , add it now and then put some more sauce on top. Bake for an addition 25-30 min or until golden brown. The pasta is super easy to make, the bag has three different ways to cook it. I cooked mine in a frying pan for two min then added some sauce to it.
